Not just for kicking diabetes; Incredible resource for plant-based eaters/PB leaning too
Immediately ordered a kindle version too, after looking at the hard copy book which arrived today. So much useful information, simply presented.Made one of the recipes today – tasty, healthy and satiating. It combined simple ingredients I had never put together in a salad.Book also shows you how to put together a plant based menu for the day, by sharing several menus based on different daily calorie goals (1,600 calories, 2,000 calories, 2,400 calories).Recipes are created by world class dieticians to provide excellent nutrition and satiation.Helpful information on portion sizes, and other helpful “general rules of thumb.”And of course, great information on kicking diabetes or avoiding diabetes through healthy eating. After using this cookbook for a few weeks, it will be easy to plan healthy meals on the fly.So happy to have found this book! I have scores of plant based/vegetarian/vegan/regular cookbooks – but many just offer recipes piecemeal instead of showing you how to build a healthy overall diet.To your health!

This is a vegan approach to control diabetes and possibly reverse it.
This book is well written with tons of information. A food shopping list is given and lots of recipes to get you started. It is NOT a typical American diet and will challenge you to alter your way of eating. You need to be commited to see if this will help. It should. Veggies is foremost in this diet cookbook which is actually a healthy way to eat.

More actually useful recipes than many books…
This book crossed my path at the most recent VegFest NW, in Portland, OR. I already knew that the hummus-like dip made with zucchini and soaked sesame seeds was incredible….we had samples at the food lectures. There are other amazing recipes in the book, too. Changing to a more plant-based way of eating, hopefully low fat, will improve or even reverse type 2 diabetes. It has for my family and many other people, and Kaiser Permanente says so too, so not just testimonials. OK, so good tasting food? Yes, and recipes in this book can get you going in the right direction!

    Good product
Excellent book outlining what to eat and what not to eat to become a healthier you. Book is based on wholefood, plant based eating. Check out the video and the cookbook entitled “Forks Over Knives.” Title refers to either use your fork to fight many diet related diseases, such as, diabetes; instead of going under the surgeon’s knife. I highly recommend “The Kick Diabetes Cookbook” and the “Forks Over Knives Cookbook.”

Way Too Many High Sugar (Glucose) Recipes
This recipes in this book are not recommended as a treatment or as a cure for type 2 diabetes. The reasons are as follows:1. The recipes are loaded with fruits and root vegtables that contain few nutrients relative to their nutritional content and glucose levels that by first hand experience raise HGB A1C to unacceptable levels.2. It isn’t clear how tbe fruits and root vegetables were chosen for inclusion. If this was done by the use of glucose load (GL) or glycemic index (GI), then again by first hand experience this procedure will in no way help to reduce HGB A1C.3. In particular for further elaboration on pages 50 to 52 are lists of foods in bold type that are used frequently in the book’s recipes. This list includes carrots, corn, sweet potatoes, winter squash, apples, bananas, and raisins (of all foods to list a dried fruit that is loaded with glucose!)4. Other foods listed more in the infrequent use category list include pineapples, plums, prunes, pumpkins and other dried fruits also high and/or very high in glucose.5. The chart on page 35 lists 7 levels grains in the order of preference for selection. Three of the 7 levels list wheat with an additional 2 more levels implying wheat because they refer to 12 grain cereal or rolled grains. Now what is wrong with that? Answer: Wheat contains a protein called a lectin that crosses the gut barrier and enters the blood stream. It then blocks cellular receptors of insulin from docking allowing glucose to enter the bodies cells thusly shutting down the human body. This reaction of course shuts down the brain as well since it’s cells require glucose to function. This effect is well known in the literature and should not have been missed by these authors.
